About Cooperativa Valli Unite
Now over 30 years old, this cooperative was started by three men who decided to join forces and merge the produce of their vineyards to try and preserve an old way of farming. By shunning pesticides and chemicals and using a hands-on approach to farming, they have created a cooperative that embraces a very non-invasive way of wine-making, natural, biodynamic and organic while keeping their wines approachable and distinctive. Fermented in cement vats, the wine is transferred to old barrels to allow it to soften and mature before release.
Fresh tropical fruit and lemon are the first things you’ll come across on the nose and on the palate, there's as little of that natural funk on the nose as well. This little beauty has got body, with a generous amount of acidity to keep things bright and fresh. It’s natural and unfiltered so expect some haziness… But that’s absolutely normal and that haze means more flavour!
