About Dà Mhìle
Located in a beautiful valley in Ceredigion West Wales, Glynhynod Farm has been owned and run by John, Patrice and Paula since 1981 after they moved from their native Holland. Since day one the plan has always been to farm organically. Patrice brought over his skills as a cheesemaker and on the 10-year anniversary of establishing their Caws Teifi Cheese they decided to celebrate with a bottle of organic whisky…something which they discovered didn’t exist at the time. This set the ball rolling for a collaboration with Springbank distillery in Scotland to commission the first organic whisky.
So in 1992 Dà Mhìle distillery was born. Since those early days the distillery has added organic rums, brandy, liqueurs and their famous gins to the list of sustainable and organic spirits.
17 different botanicals make up this very refreshing and complex gin, it has hints of mint and liquorice along with more floral notes but still, and importantly, with a good juniper core. You can drink it neat over ice as it has the complexity to show well on its own. but if you want it with tonic then try it with a non flavoured tonic or a Mediterranean flavoured example like Fever Tree. As for a garnish try elderflower if you can get it...if not go lime over lemon.
