Jaunjo Tallaetxe is a priest and shepherd who felt there was more to his regions wines than just pouring them from a height into tumblers and set about replanting his parents vineyards and creating his own cellar. The results are compelling, being lively, textured and remarkably complex, but infused with the scents and characters that also make the wines typical of their region. He began making wines in 2017, so this is a very young winery. Given what he's produced so far there are thrilling things to come.
A complex nose of pear, apple, herbs and lime zest. There's also a wonderful almond nuttiness that comes from 6 months on the lees. The palate is taut and fresh with a hit of green apple, pineapple and a touch of salinity. It's an intriguing and serious wine from a grape that barely ever leaves the Basque country. Seafood and light small plates will see you in heaven with this wine.
